Hi Reader,

How are you all doing at this peak of summertime? Basking in the warmth or waiting for it to end? 😂 We haven't had too many super hot days, although the two we did have this last week were accompanied by a heat pump failure, so no AC - boo. Were we ever thankful when it got fixed!!

Mostly it's been in the 70s-80s with a nice breeze so the windows are open most of the time.💜 But here int he PNW we don't have a lot of sticky humidity, so I know my love of the summer is because of where we live. Surprisingly for "green" Oregon, everything is brown but the evergreen trees - we usually get very little rain in July and August and this year the lack of rain started in early June. But all the flowers that are watered are loving the sun (as well as the green beans and tomatoes - we had our first of these from the garden last week 👏). Meals made with garden produce are the best!

If you need some quick, healthy meals, I've definitely got some ideas for you.😀 I'm listing some seafood recipes below because they are the fastest of any protein, really, but if you're not a seafood lover, hit the button below to go to a list of other quick options! (And don't forget to check out the mocha chip cookie below, too - they are perfect for freezing and taking on trips.)

It's a time of growing harvests and reaping the rewards of March and April planting, and it's also a time of trying to keep everything alive in the heat.😳 During July and August I have our watering system set to run for 3 hours every 3 days (up from every 4 to 5 days in the spring...
