What I'm Making

Orzo is my favorite pasta and I was craving a salad made with it recently which led me down the path of trying to find a healthier orzo-type pasta. Since we like chickpea pasta, I decided to try this one-ingredient (how??) chickpea orzo. Uncooked, it's actually little rectangles instead of the traditional orzo shape and honestly, I had my doubts because how could literal chickpeas have that texture I appreciate in orzo?

I suppose you can figure out since I'm writing about it that it is surprisingly similar!! I still can't figure it out, but it gave me all the orzo love with more protein and fiber, so I'm here for it.😀

Here's how I used it one day and then for leftovers the next:

  • Meal 1: Grilled chicken thighs, roasted vegetables (used what I had: cauliflower, carrots, onions, cabbage), orzo tossed with about 1/4 cup of leftover pesto.
  • Meal 2: "Orzo Chicken Salad" with all the leftover roasted veggies and orzo, to which I added the leftover chicken chopped up and then kalamata olives, crumbled feta, and artichoke hearts all tossed with a lemon vinaigrette and then served on a bed of lettuce (because we are being over run with lettuce, no matter that I staggered the plantings, lol). It was DELICIOUS - neither of us was reminded of the previous meal. Plus, the chickpea orzo really held up well and seemed the same to me.

The orzo was only available in a package of 8 boxes, so it's a good thing we liked it. 😂 Happy to have a summer of healthier orzo salad ahead of me!
